Our Story
Today, Gazander Oysters is a thriving family-owned business dedicated to producing premium-quality oysters with a strong focus on sustainability and innovation. Owned and operated by Steven (Thommo) and Carly Thomson, the business has grown significantly, with a dedicated team now managing the farm’s day-to-day operations as Thommo begins to step back from the physical labor.
We take immense pride in cultivating oysters using a long-line basket system, ensuring minimal environmental impact while taking full advantage of natural weather patterns—tides, wind, and rain—to optimize growth. Our premium oysters thrive in the pristine waters of Little Douglas Bay, developing their signature deep-cupped shape and rich flavor. Sustainability remains at the core of our operations, allowing us to deliver a consistently high-quality product to our buyers while preserving the delicate balance of our marine ecosystem.
Our Evolution
Gazander Oysters was established in 2002 as a labor of love. In the early days, work was carried out on nights and weekends, with all profits reinvested into the business to perfect our farming techniques and infrastructure. Thommo, who comes from an agricultural background on the Yorke Peninsula, brought experience from diverse industries, including commercial banking, paving and landscaping, and rock lobster fishing. Carly, a second-generation oyster grower, grew up locally, with deep roots in the industry.
After returning from Atlanta, Georgia (USA) in 2001, Thommo and Carly took the opportunity to lease water from Carly’s family business, Coffin Bay Shellfish. Over the years, they refined their farming methods and built a brand synonymous with premium oysters. The business has since expanded, and their three children—Gia, Billie Rose, and Zephyr—have become active participants, growing up around the farm and developing their own love for oysters.
